1. Fish and Spinach Broth
2. Cucumbers with Yogurt and Dijon Mustard

6. Prune Cake with Whipped Cream

Prune Cake with Whipped Cream - Serves 8

½ cup shortening
1 cup sugar
2 eggs
½ cup buttermilk or prune juice
2 tsp single-action or 2 tsp double action baking powder
2 cups sifted all-purpose flour
½ tsp each of soda, salt, nutmeg and cinnamon
1 tsp vanilla
1 cup cooked, drained, pitted and chopped prunes
½ cup chopped walnuts or filberts

Cream shortening, add sugar and cream until light and fluffy. Add eggs one at a time and beat thoroughly. Add buttermilk or prune juice alternately with sifted dry ingredients. Stir in vanilla, prune pulp and nuts. Pour into two greased layr-cake pans or a sheet-cake pan about 10 x 12".

Bake in a moderate oven, 350º, for 25 to 30 minutes.

Serve warm or cold with whipped cream.
