Oregon - The Beaver State, State flower: Grape

1. Fish and Spinach Broth
2. Cucumbers with Yogurt and Dijon Mustard
3. Salmon Steak Baked with Stuffing
4. Turnips (As you like them)
5. Buckskin Bread
6. Prune Cake with Whipped Cream

Salmon Steak Baked with Stuffing - Serves 8 to 10

1 large piece salmon, about 5lbs
Salt
Lemon juice
3 cups cracker crumbs, coarse
4 Tbsp melted shortening
½ tsp salt
2 Tbsp dill pickle juice
1 bay leaf, crushed
½ tsp Worcestershire sauce
2 Tbsp chopped dill pickle
2 Tbsp chopped celery
1 onion, chopped
1 clove garlic, chopped
1 blade dry sage, crushed or ½ tsp dried sage

Rub fish inside and out with salt. Sprinkle with lemon juice. Combine all stuffing ingredients and pile into fish. Sew together, if desired. Place on a rack in a shallow pan. Bake, uncovered at 500º, allow 10 minutes per pound. Slice across body to serve both sides containing stuffing.
