Oregon - The Beaver State, State flower: Grape

1. Fish and Spinach Broth
2. Cucumbers with Yogurt and Dijon Mustard
3. Salmon Steak Baked with Stuffing
4. Turnips (As you like them)
5. Buckskin Bread
6. Prune Cake with Whipped Cream

Turnips (As you like them) - Makes 6 to 8 servings

1-½ lbs small white turnips
¼ cup butter
½ tsp salt
¼ cup coarse ground black pepper

Scrub turnips well under cold running water, trim stems and roots. Parboil until barely tender, about 20 minutes.

Place in a shallow baking dish, dot with butter or margarine and sprinkle with salt and pepper.

Cover and bake in preheated oven, 375º, for about 30 minutes. Check for tenderness with fork.
