Ginger Pickled Beets

Cooked beats, 10 to 15 depending on size
3 cups vinegar
1 cup water
1 tsp ground mace
1 tsp ground ginger
½ tsp ground cloves
2 Tbsp prepared horseradish
2 Tbsp sugar

If the beets are small, leave whole. If large, slice them. Heat the vinegar with all other ingredients. Place beets in hot, sterilized quart jar. When the vinegar is boiling, pour it over the beets. Let stand 24 hours before using.
