Cranberry Cream Pie - Serves 6 to 8

Prepare a baked pie shell.

Combine, stir and cook over very low heat until thick:

½ cup sugar
1/8 tsp salt
6 Tbsp flour
1 cup whole cranberry juice
3 beaten egg yolks
3 Tbsp butter
1¼ cups milk

Add: Juice of 1 lemon

Cool the custard. Pour it in the pie shell and cover it with a meringue made with 2 egg whites.

Bake it in a slow oven, 300º, for 15 to 20 minutes.
