Rhode Island - The Ocean State, State flower: Violet Green Salad - Serves 6Rub a wooden salad bowl with a cut clove of garlic. In it arrange the leaves of a head of green garden lettuce, washed, drained and patted dry with a cloth. Over the lettuce sprinkle 1 cup of small raw cauliflowerets and 1 green pepper cut in thin strips. Chill. Just before serving, peel, halve and slice 1 ripe avocado thinly. Add it to the salad and pour on ½ cup French dressing made with 1 part wine vinegar, 3 parts olive oil and salt and pepper. Add prepared mustard to taste. Add a sprinkling of minced fresh parsley and chives and toss the salad. |
