Rhode Island - The Ocean State, State flower: Violet South County Pie (Sausage and Oysters) - Serves 61 lb. link sausages, 8 to 10 per pound Cook sausages in a skillet or sauté pan over a medium heat, turning on all sided until nicely browned all over and most of the fat is rendered, 15 to 20 minutes. Drain sausages on paper towel. Drain Oysters, reserve liquid. Preheat oven to 375º. Into biscuit mix in medium bowl, stir ½ cup oyster liquor; mix with fork to make a stiff dough. Layer oysters in bottom of a 9 x5 x3" loaf pan. Spread biscuit mixture over top. Press sausages into dough, close together. Sausages should be half submerged in the dough. Bake 45 minutes or until biscuit topping is golden and cake tester inserted into the biscuit part comes out clean. Serve hot, in crosswise slices. |
