Rhode Island - The Ocean State, State flower: Violet Succotash1 cup dry lima beans, soaked overnight and drained Place the beans in a heavy pot. Add the bouillon and then enough water to cover. Cook until tender, adding more water if necessary. Drain the beans, reserve liquid. Stir the corn into the beans and add some of the reserved liquid, if the mixture is too dry. Season the mixture to taste. Reheat and serve. |
