Green Peas with Pearl Onions and Mushrooms - Serves 4

2 cups green peas, blanched
1 cup pearl onions, blanched
½ lb small white mushrooms, slice finely
4 Tbsp olive oil
Salt and pepper to taste

Sauté the mushrooms in the olive oil. Add the other ingredients. Stir and add a sprinkling of water. Cover and cook over low heat for 10 to 15 minutes. Stir occasionally until done. Peas must be soft, not mushy.
