South Dakota - State flower: American Pasque

1. Shrimp and Oyster Bisque
2. Cabbage Soup

Fried Cucumbers - Serves 4 to 6

4 large cucumbers, washed and cut into slices 1/8" thick
Salt and coarsely ground black pepper
Flour for dusting
Oil or vegetable shortening

Spread cucumber slices between paper towels to dry. Let stand for about 1 hour.

Dip slices in flour, coating both sides lightly.

Fry quickly in deep fat until slices are golden brown on both sides.

Drain on paper towels and serve at once.
