South Dakota - State flower: American Pasque Lamb Stew - Serves 4 to 64 lbs lamb shoulder cut into 1-½" cubes Heat the oil in a large, heavy kettle or casserole, one with a tight fitting lid. Add lamb and brown on all sides. Add onion, garlic and juniper berries; sauté until the onion is golden. Pour in 2-½ cups water, season with salt and pepper, cover and simmer for 3 hours, stirring occasionally. When lamb is tender, remove and serve hot. |
