South Dakota - State flower: American Pasque Scandinavian Vegetable Salad - Serves 41 cup green peas The veggies should first be cooked separately, in lightly salted water, until tender but not too soft and drained thoroughly. Peel and dice the beets after they are cooked. Combine the peas, carrots and beets. Add ½ cup celery, dill, garlic wine vinegar and salt and pepper. Toss well and let the salad marinate for several hours. Shortly before serving, mix in sour cream. Decorate the salad with a small bouquet of parsley and radishes. |
