Tennessee - The Volunteer State, State flower: Iris Mountain Ham with Red-Eye GravyCarefully trim the rind off a slice of Tennessee ham. Rub a heated skillet with ham fat. Fry the ham over low heat until brown; turn and brown on the other side. A sprinkle of sugar on each side, before cooking, intensifies the flavor. Pour 2 Tbsp of ham grease into a gravy boat. Brown the residue in the skillet. Add ½ cup water and bring to a boil. Pour into the grease in the gravy boat. To make a redder gravy, before adding the water, add to the skillet 1 Tbsp of brewed coffee or ½ tsp sugar. |
