Tennessee - The Volunteer State, State flower: Iris

Peach Glaze - Serves 6 to 8

2 cups sliced peaches
½ cup water
¼ cup granulated sugar
¼ cup brown sugar
2 Tbsp cornstarch
1 Tbsp lemon juice
1 Tbsp butter or margarine
Pinch salt

Measure up one cup of fresh sliced peaches. Add water and cook for 4 minutes. Mix sugar and cornstarch and add to the fruit mixture. Cook until thick and clear. Add lemon juice, butter, salt and remaining cup of peaches. Cool. Pour over sponge cake and chill.
