Tennessee - The Volunteer State, State flower: Iris Sponge Cake with Peach Glaze1 cup fine granulated sugar Sift sugar and measure out 1 cup. In a bowl beat 4 egg whites until stiff but not dry. Beat in gradually ½ cup of the sifted sugar and set aside. In another bowl beat 4 egg yolks until thick and lemon-colored, then beat in the other ½ cup of sugar. Measure ½ cup of sifted potato flour and sift it again, into the egg yolks with 1 tsp of baking powder and ¼ tsp salt. Blend well, then cut and fold the whites into the batter until it is well mixed but do not beat it. Pour the batter into an un-greased cake pan (it should be about 2/3 full) and bake in a preheated 350º oven for 30 to 40 minutes or until the sides of the cake begin to shrink from the pan and the top is golden brown. |
