Tennessee - The Volunteer State, State flower: Iris Tennessee Fish House Soup1 catfish (about 3 lbs) skinned and filleted, cut into small pieces Put fish in saucepan with bacon, onion, parsley and seasonings. Cover with watr and cook gently until fish is tender. Remove bacon. Remove fish and put in a warm tureen. Make a roux of the flour and butter, stir in milk and continue stirring until smooth and thick. Stir in the soup and simmer until blended. Season to taste. Remove from heat, blend in egg yolks, pour over the fish in tureen, and serve. |
