Okra, Tomatoes and Rice - Serves 4

1 lb fresh baby okra or 1 pack frozen
1 1 lb can tomatoes, drained
2 cups cooked rice
1-½ Tbsp olive oil
Salt and pepper

Dice the okra and sauté in oil. Turn frequently. When almost done, add the tomatoes. Mix well and cook a few minutes longer. Add the rice, stir all together, heat thoroughly and serve.
