Praline Bavarian Pie

1 baked pie shell
1 package gelatin
½ cup cold strong coffee
1 cup granulated sugar
6 egg yolks
1 cup boiling water
2 cups heavy cream, whipped
1 Tbsp rum
1 cup pralines, broken up
5 egg whites
Pinch salt

In a double boiler dissolve gelatin in coffee. In a mixing bowl, beat sugar and eggs. Gradually beat in the milk. Add to the coffee and gelatin. Be careful to not overheat.

Pour into a mixing bowl. Beat the egg whites and salt until stir. Fold into the egg yolk mixture along with the pralines and place into the refrigerator. Lightly fold occasionally while cooling.

Remove from refrigerator and fold in the whipped cream and rum; then, turn into pie shell and refrigerate. Additional crumbled pralines make a nice decoration on top of the pie.
