Texas - The Lone Star State, State flower: The Bluebonnet Shrimp Bouillon - Serves 6½ cup uncooked shrimp, shelled and chopped fine Put shrimp, mushrooms and the two stocks in a saucepan and bring to a boil. Simmer covered for a few minutes until shrimp are done. (The recipe says 5 or 10 minutes which I think is too long. Two to 3 minutes will provide more tenderness.) Add seasonings to taste and serve in cups with a sprinkling of the raw onions. |
