Utah - The Beehive State, State flower: Sego Lily

Prune Cake - Serves 9 to 12

2-¼ cups sifted flour
1 Tbsp baking soda
1 tsp allspice
1 tsp cinnamon
½ cup cloves
¼ tsp salt
½ cup butter or margarine
1-½ cups sugar
2 eggs, well beaten
1 cup cooked pitted prunes, pureed
1 cup sour milk or buttermilk

Sift flour, baking powder, spices and salt together. Cream butter and sugar; beating until creamy. Blend in eggs then prunes. Mix well. Add flour alternately with milk, adding a small amount at a time and beating until smooth after each addition. Pour into a greased 10" square pan. Bake at 350º for 40 to 45 minutes. Cool and frost with Creamy Frosting.
