Vermont - The Green Mountain State, State flower: Red Clover Crowley's Cheddar Cheese Soup - Serves 6 to 8½ cup each: finely diced carrots, celery, green pepper and white onions Over slow fire cook the vegetables for 30 minutes; strain. Combine the cooked vegetables and the stock. Add the butter and blend in the flour, stirring slowly. Bring to a simmer. Add the milk, stirring in. Bring to just before the boil. After about 5 minutes, add the cheese. Keep stirring until the cheese is melted. Season to taste with salt and pepper. |
