Vermont - The Green Mountain State, State flower: Red Clover Raisin Brown Bread with Maple Butter - Yield 3 loaves2 Tbsp lard Dissolve lard, butter, sugar and salt in 2-½ cups hot water. Add molasses and ½ cup rinsing water (molasses cup). Let cool to lukewarm. Dissolve yeast in ½ cup warm water. Add to first mixture. Mix flour and spices and beat into mixture. Stir in raisins. Knead lightly. Place in greased bowl, cover and let rise in a warm place until doubled in bulk, about 1-½ hours. Knead again and let rise a second time until doubled in bulk, about 30 minutes. Cut into 3 pieces. Shape into loaves. Place in greased 9 x 5 x 3" pans. Cover and let rise until dough is rounded above edge of pan, about 50 to 60 minutes. Bake at 400º for 35 to 40 minutes. |
