Vermont - The Green Mountain State, State flower: Red Clover Rhubarb Crumble - Serves 4 to 64 cups rhubarb, diced Mix together and put in a well-buttered 9" glass pie plate. 1 cup brown sugar Cut the above together as you would ordinary pastry ingredients until the mixture crumbles evenly. Spread this mixture evenly over the rhubarb; bake for 30 minutes in a 375º oven, or until the rhubarb is bright red and soft. Serve warm or cold with heavy cream or whipped cream. |
