Williamsburg in Old-Fashioned Turkey Soup - Yield: About 4-½ quarts

3 large onions
3 stalks celery
2 medium carrots
½ pound butter or margarine
1-½ cup butter or margarine
1-½ cups flour
3 qt turkey or chicken stock
1 pint light cream
Salt and white pepper to taste
¼ cup finely diced cooked turkey
¼ cup cooked rice

Chop onions, celery and carrots very fine. Cook with a little water for 20 minutes or until tender. Melt butter and blend in flour well. Heat stock and cream and add very gradually to butter and flour mixture, stirring until lumps disappear. Add vegetables, water and all stir and cook over low heat for 10 minutes. Season the soup to taste; Add turkey and rice.
