Leek Pie

10 strips bacon; cut to 1" lengths.
2 cups sliced leeks
¼ cup water
1 unbaked 9" pie shell
3 eggs
1 cup evaporated milk
½ tsp salt
¼ tsp nutmeg
Dash pepper
1 cup grated cheddar cheese

Fry bacon until crisp; drain on paper towels. Drain off all but 3 Tbsp bacon drippings. Add leeks and water to pan with drippings; cook until tender and liquid is absorbed. Bake shell at 450º for 5 minutes. Beat eggs and milk together; add leeks and remaining ingredients. Pour into hot pie shell. Bake for 15 minutes longer. Reduce oven temperature to 350º. Bake for 25 minutes longer or until knife inserted near center comes out clean. Let stand for 10 minutes on wire rack before cutting. NOTE: May be served cold.
