Washington - The Evergreen State, State flower: Western Rhododendron Minted Carrots - Serves 3 to 41 lb carrots Peel or scrape carrots; cut into finger-sized pieces about 2" long. (Or just use the packaged "baby" carrots.) Place in boiling water to cover in saucepan; add salt and sugar. Cook until just tender; drain. Dot with butter; sprinkle with brown sugar and slightly crushed mint. Shake gently to spread seasonings over carrots. Return to low heat; simmer for several minutes. Serve hot. |
