Western-Baked Salmon with Bacon - Serves 6 to 8

3 or 4 pound salmon, whole
Prepared mustard
Salt and pepper
1 onion, sliced
4 slices bacon

Have head of salmon removed; clean the fish well. Spread inside with mustard, season with salt and pepper. Lay slices of onion in the fish. Place in a greased baking dish. Cover with bacon slices and bake, uncovered, in a 350º oven for 45 minutes, or until the fish flakes easily when tested with a fork.
