German Sour Bean Salad - Serves 6 to 8

4 cups baby lima beans
1 med. onion, thinly sliced
1 cup sour cream
1-½ Tbsp cider vinegar
2 Tbsp sugar
Horseradish
Salt and pepper
Chopped parsley

Cook the beans in salted water to cover until just tender. Drain and mix with the onion. Beat together with a fork the sour cream, cider vinegar, sugar, horseradish and salt and pepper to taste. Add this dressing to the beans and let them marinate for at least one hour. Serve the bean salad cold and liberally sprinkled with chopped parsley.
