Southern Corn Pudding - Serves 6 to 8

3 cups corn, cut from cob
3 eggs, slightly beaten
1 tsp salt
3 Tbsp sugar
1-1/8 cups scalded milk
1/8 tsp pepper
3 Tbsp salted butter

Combine corn, eggs, salt and sugar; stir in milk slowly. Add pepper and butter; mix thoroughly. Pour into greased baking dish. Bake at 325º for 30 to 40 minutes or until firm.

Two medium cans corn, drained, can be substituted for the fresh corn.
