Wisconsin - The Badger State, State flower: Butterfly Violet Crabmeat Sauce3 Tbsp butter Melt butter and stir in flour until smooth, the gradually add milk off heat, stirring constantly to make a well blended mixture; return to heat to thicken, add salt and a dash of cayenne. Flake crabmeat and stir into sauce. Just before serving add lemon juice, sherry and egg yolk, stirring over low heat for about a minute. |
