Lemon and Wine Sauce

½ cup sugar
2 Tbsp cornstarch
1-½ cups water
1 lemon
4 Tbsp butter
½ cup sherry

Put sugar, cornstarch and water in top of a double boiler or a Bain Marie and cook over boiling water, stirring constantly for ten minutes. Grate half of lemon rind, the squeeze all of juice. Remove thickened sugar mixture from heat and stir in lemon rind and juice along with butter and wine. Serve hot over Snowdon Pudding.
