Wild Rice Johnny Cakes with your Green Vegetables - Makes 6 cakes

1 cup wild rice, washed in cold water
3 cups water
1 tsp salt
3 Tbsp white corn meal
Bacon drippings

Put rice, water and salt in a saucepan, bring to a boil and boil gently, uncovered, for about 35 minutes or until the rice is tender but not mushy.

Stir in the corn meal, a tablespoon at a time. Let mixture cool until it can be shaped with the hands. Shape into flat cakes about 2-½ to 3" in diameter.

Brown the cakes well on both sides in bacon drippings; drain on paper towels. Eat hot or cold.
