Beet, Cucumber and Onion Salad

6 medium beets, washed
1 cucumber, washed and sliced
3 yellow onions, peeled and sliced

DRESSING

¾ cup salad oil
¾ cup cider vinegar
½ tsp salt
¼ tsp fresh ground black pepper

Place beets in a large saucepan, cover with water and simmer for about1-½ hours or until ender. Peel and slice.

Place the sliced beets, cucumbers and onions in a large bowl and toss lightly to mix.

Mix the dressing ingredients together, dress the salad, toss and let stand for about an hour before serving. Toss again and serve.
