Green Beans with Tomatoes - Serves 6

1 lb fresh string beans
2 good sized onions, chopped
2 cups fresh tomatoes, chopped
4 strips bacon
1 tsp salt
1/8 tsp pepper
¼ tap dried basil, crumbled
1 cup hot water

String the beans and cut into 1" pieces. Fry out bacon until crisp, drain and reserve.

Sauté onions in bacon fat until translucent, not brown.

Add the beans, tomatoes, seasonings and water and cook until the beans are tender, 30 to 40 minutes.

Serve with crumbled bacon on top.
